Soup, The Ultimate Comfort Food

January, until at least mid March, are not months exactly seeped with the preparation and eating of salad, no matter how delicious .......

...... it's more a time for hunkering down and getting all cosy with some good, honest, comfort food once all the chores are done, the blinds are down and the day ebbing  .......

...... and for that reason Darrell has gone all gung-ho with a spending splurge via Ebay, adding a pile of new soup books to his ever burgeoning, culinary reference library.

I think with the festive leftovers he has carefully categorized and stored in the freezer and said new books, we can embrace all the pleasures that soup has to offer for at least the next 2 years, without a break, if he were to make every single recipe there within!

Not that I am complaining in any way, shape or form, because Darrell does make a most exceedingly wonderful soup, be it with or without the aid of a recipe book ........

...... his pear and Roquefort combo last night was an absolute triumph, with second, third and fourth helpings very much requested!  What are we like, if not little soup dragons!

Yet again, you have got my mouth watering. :)

All together, now: I want pear and Roquefort soup, and I want it, now!

In 1987, my dad cut out a stilton soup recipe from The Guardian, and it was delicious. When I was clearing out the house, I found the cutting, plus he'd even typed it out. I saved the sheets, and took photos of them, to send to my brothers in Seattle and Glasgow. It may seem like a waste of good stilton, but it is amazing!

The ingredients are celery, onion, flour, salt, pepper, stock (chicken or veal!), milk, butter, cream and, err, stilton!

If you are tempted to make it, I found some versions online, by Jamie Oliver, Sainsbury's, and a more recent one, by The Graun. All contain potato. If you are interested, I could post the links. If you want the one my dad used to make, I could sent it to mum, to post.

A few months ago, I mentioned the soup to Felipe, a wealthy member of my classical music club. He asked for the recipe, and he said he would ask his chef to make it, for one of our gatherings. Next week, we are all meeting at his house. I hope he has arranged it. I was tempted to send him a reminder, but it doesn't seem appropriate.

P.S. If we don't get stilton soup, I may mention it to him, when we meet up for a cuppa.

Oh these soups sound very tempting - a bit more exciting than my traditional Lentil soup I made a couple of days ago! Darrell always on trend. JantheFan x
